If you’ve been wishing for more variety in your soup options, your search ends here. Sisi Yemmie’s latest cooking tutorial introduces Miyan Taushe, a traditional Northern Nigerian pumpkin soup that boasts a rich, robust flavor.
She begins the process by boiling beef along with onions and various seasonings; chicken can be a substitute as well. To this, she adds chunks of peeled pumpkin, allowing them to soften in the mix. As this simmers, she prepares a blend of dry peanuts and ground crayfish. Once the pumpkin reaches a tender consistency, it is pureed into a vivid yellow mixture.
Next, she focuses on the pepper base using tomatoes, tatase, and scotch bonnet peppers. Heated palm oil is added to a pot with beef and onions, followed by the pepper mixture, then the peanut-crayfish paste, and finally, the pumpkin puree. Chunks of beefsteak are incorporated along with a paste of garlic and ginger to add a subtle kick. The dish is rounded off with leafy greens.
Miyan Taushe can be served alongside tuwo shinkafa, fufu, eba, rice, or masa, making it a comforting choice filled with flavor.
